Trying to go zero waste in a low income area neighborhood vs. a wealthy neighborhood can result in two very different stories. To read a guide written by someone in downtown posh Manhattan that only sees zero waste through their own lens could prove to be a little disappointing for someone living in a low income area. I often hear that going zero waste is only something that wealthy people can do. For the most part I disagree with this statement however there is some truth in it. In certain ways going zero waste is much easier for people who live in wealthier neighborhoods that have more options. For example many low income areas don’t have easy access to a grocery store with a bulk refill section and thus have to buy more packaged foods. This one variable alone makes it much more difficult to zero waste grocery shop.
Wild fermentation is a lost art in our generation and the truth is that it is an inexpensive and accessible way for just about anyone to eat healthy. Wild fermentation is used to preserve fresh foods and at the same time cultivate beneficial bacteria, known as probiotics. Some of the ferments you find at the store may be extremely expensive, but making your own fermented foods and drinks makes them very inexpensive and accessible. Making your own foods at home can reduce the cost to a fraction of commercial items. Eating naturally fermented foods that are rich in probiotics and vitamins is a great way to add beneficial nutrition and delicious flavor to your diet. It’s a myth that you have to be wealthy to eat healthy. If you grow your own vegetables, some of your favorite fermented treats can be practically free.
This blog and video series serves as an introduction to creating five different at-home wild ferments with a few of my favorite recipes. All of the ferments I cover here require minimal set-up, yet take some time to naturally cultivate. These ferments are very simple for anyone to make because in general, nature does the work. You don’t need any fancy ingredients or equipment for any of these recipes.
The information here is designed to get you started and show how easy it really is. However, the videos and this blog will not answer every question you have about fermenting. If you want to learn more beyond these basic recipes and videos, I would recommend finding some resources online and books for that.

I’ve dived into over 2,000 dumpsters in over 25 states across the USA. By now I’ve pulled out tens of thousands of dollars worth of perfectly good food. Most of it I’ve given away but I’ve also lived solely off food from grocery store dumpsters for months at a time. I don’t see dumpster diving as THE solution to food waste or hunger but at the same time I figure if the foods going to waste right now, why not eat it? When people talk about sustainable businesses the truth is that these businesses are far from sustainable. Most, if not all, of the major companies that have sustainability directors are as far from sustainable as it gets. They may be decreasing their environmental impact a little bit here and a little bit there but they just will never be sustainable. In this article I present to you businesses that are truly sustainable. These are businesses that will truly make your community and the world a better place. There is no green washing here and if these businesses are done correctly there will be no green washing in any of them. The idea of this blog isn’t just to inspire people to start sustainable businesses though. It’s really about helping people to figure out how they can support a sustainable life. None of these businesses are about getting rich. They are about finding a way to do something that you love and support your needs while living a life that is beneficial to the earth, your community, and yourself rather than destructive to the earth and the life on it. These business ideas, with a few exceptions, are designed to decrease consumption rather than increase it. For example selling organic cotton t-shirts is sort of great but the truth is there are already enough t-shirts on earth and we don’t need any more. These business ideas go a few steps further than a business idea like that.
Day 4 – July 11th
Before going to bed last night I said to Cheryl, “Let’s go to Walmart tomorrow.” As soon as the words came out of my mouth I was taken aback. I never expected those words to come out of my mouth again after I made the choice to stop giving them business a few years ago. But I feel that this project calls for it. Millions of people shop at Walmart for groceries and some people around the country have told me that it’s their only “grocery store” nearby. This is also where much of the community of Bankhead gets their groceries so it’s a must see.
The average grocery store in the USA has around 40,000 items and most of them are backed by big time marketing campaigns that are doing their best to make sure you choose them. So of course shopping at the grocery store can be overwhelming. These companies will do their best to take your money and most of them don’t really care whether you received a good deal or are slowly working your way towards a heart attack or diabetes. There is plenty of good news though. Their tactics can be beat. Every single one of their ploys and tactics don’t stand up to an educated and determined person. You can eat healthy for much less than they’d like you to think and it might even prove to be tastier! After 3 years in the making, I’m so excited to finally bring to you my Sustainable Living Series. The series documents my off the grid bike ride across the USA on a bamboo bicycle where I practiced sustainable living to the extreme. In 4,700 miles of cycling, I used just 160 gallons of water, burned less than one gallon of gas, never turned on a light switch and created only 2 pounds of trash. That is 80x less water, 200x less trash, 600x less fossil fuels, and 1,000 times less electricity than the average American! Plus I ate nearly 300 pounds of food from grocery store dumpsters to prove just how much perfectly good food we’re wasting in the USA.
The things I did were extreme but in this series you’ll learn how your daily actions affect the world around you both near and far. The episodes are food, waste, water, transportation, and energy and each episode informs you in an inspirational and fun way. By the end of the series, you will know the basics behind sustainable living and what you can do to live more sustainably without going nearly to the extremes that I did on my journey.
